Letter from Chef Robert
It has been a privilege to serve as Executive Chef to the Coronado Club for the past eight years. From the beginning, my goal has been to balance the club’s time-honored traditions with a globally inspired culinary program, offering our members ingredients that you don’t find in most local restaurants. Tuna from Hawaii, scorpion fish from Baja, halibut from Sitka Sound in Alaska – all of it pulled fresh from the ocean that morning, processed on the dock and shipped directly to our door where it is prepared and plated within 48 hours.
The story of the Coronado Club is one of relationships with the local farmers, who grow our fruits and vegetables to order, the captains of fishing boats and their families and the purveyors of wild game and ranch-grown beef. It’s also about the relationships with our members, providing them with a sense of being at home with a personal chef, a spirit of adventure and shared discovery and knowledgeable and attentive service.

Josh Bogen of SeafoodS.com has worked with Chef Robert since his second month at the Coronado Club to source seafood from around the world. With their network of small fishermen and “dock to restaurant door” overnight service, Josh and SeafoodS.com helps us maintain consistent quality and offer menu options not readily available in the Houston market.
Broken Arrow Ranch in Ingram, Texas, is an artisanal supplier of high quality, free-range venison, antelope and wild boar. Animals are humanely field harvested from ranches in central and south Texas to reduce stress and ensure meat quality.
Anume Farms is a small grower in LaGrange, Texas, with a mission to changes lives through organic nutrition. Seventy-five percent of their output is donated to community shelters and food bank; 25 percent is sold to restaurants such as the Coronado Club. We are proud to be one of the restaurants they serve and in turn to help support their mission.
